In every menu there should be one perfect coffee for milk drinks, and this Brazil is the one. It is a sweet and balanced coffee, but with a spark. We can find chocolate, orange and cashew notes, and when mixed with milk it tastes like a toffee caramel.

Using this recipe as a double shot we get a long and intense drink, but if we divide it into two espressos we get a balanced drink, with a spectacular body that reminds me of the pastiness of nougat.

The Coffee

Situated in the southern part of Minas Gerais in the Carmo region, Pedra Branca is located in Pedralva and it’s part of the Carmo Coffees group. The surrounding area is blessed with unique terroir, high altitudes, good sunlight and rainfall. The region is comprised of 7000 coffee growers with an annual output of 1 million bags. The ripe cherries are dried for 7 -10 days before being finished for 2-3 days with careful temperature monitoring to ensure the correct moisture content is reached.
