This cacao is produced by the Paquibato Farmers’ Cooperative. The beans arrive from small farmers in the Davao Region, Mindanao, to a processing center. This cacao profile won a Cocoa of Excellence award in 2019 for its nutty notes accompanied by fruity hints.
The cocoa is made up of a selection of five Trinitario varieties that are fermented for 5 days and then dried in covered beds for another 6 days.
