PROCESS > Sugar cane Decaf

The caffeine is naturally attached to the salts of the chlorogenic acid present in the coffee and is removed by hydrolysis. The coffee first undergoes steaming at low pressures before then being moistened with hot water to allow the beans to swell and soften.
At this point, the moistened coffee is washed several times with the “extractor” (ethyl acetate, naturally obtained from the fermentation of sugar cane) to reduce the caffeine down to the correct levels.
