CUPPING NOTES
Tropical fruit, fig, prune.
Full body and a nice rum long finish.
Oscar and his wife Francisca run the mill focusing on very high quality. They innovate every year and they now grow 10 different varieties. Honeys are dried on beds in the sun for two days. The duration of this process depends on the honey colour desired. The longer the drying takes, the darker the honey will be. This lot is Paraiso variety, a hybrid between Sarchimore and Catuai and has been processed as a black honey. This means that coffee was not moved at all for the first 2 days after pulping.
