The Daanisa farmer group is made up of 44 farmers who deliver their cherries to the Dambi Uddo washing plant. Its name comes from the local name for a native umbrella-shaped tree. Perhaps most importantly, it is used to provide shade for the region’s coffee trees.
The Dambi Uddo washing plant was established in 2019. Located in Sukkee Qutto, Guji, the high altitudes, often exceeding 2,000 meters above sea level, provide ideal conditions for growing high-quality coffees. This lot is the product of 44 farmers who produce excellent coffees and deliver them to the plant. Their cherries are processed separately to maintain traceability.
The farmers hand-select the cherries and deliver them to the washing plant or local collection points. At the washing plant, the coffee is graded to ensure only the ripest cherries are processed. The harvester monitors the quality of the cherries before processing.
Natural coffees, like this one, are first soaked in water to remove any underweight or damaged beans, as well as any debris. After cleaning, the cherries are transported directly to raised beds, where they are spread out in a single layer for drying. The cherries are regularly raked and visually sorted by hand to remove any damaged cherries that may have made it through the initial sorting.
After a few days, the washing station staff will increase the thickness of the layer to slow drying and stabilize the humidity. The total drying time can take up to three weeks on cloudy days, or two weeks if the weather is sunny.
The Guji region receives abundant rainfall and is characterized by rugged mountainous terrain: perfect conditions for the wide variety of coffee grown.
