Sweet and delicate with light acidity.
Yirgacheffe and Sidamo are the Ethiopian regions where most specialty coffee is grown. Their coffees are distinct because of their floral and fruity notes. Although most coffees from Ethiopia are processed as naturals due to the lack of water, this particular one is washed-processed thanks to the washing stations set up in the region by Solomon Worku, the founder of the SMS cooperative. This lot’s variety is Dega, a wild variety native to Ethiopia that has grown for hundreds of years in Yirgacheffe.
