The Daanisa farmer group is composed of 44 farmers who deliver their cherries to the Dambi Uddo Washed plant. Its name comes from the local name for a native umbrella-shaped tree. Perhaps most importantly, it is used to shade the coffee trees in the region.
Dambi Uddo's Washed plant was founded in 2019. Located in Sukkee Qutto, Guji, the high altitudes often exceeding 2000 meters above sea level provide ideal conditions for growing high quality coffees. This lot is the product of 44 farmers who produce excellent coffees and deliver them to the plant. Their cherries are processed separately to maintain traceability.
The cherries are hand-picked by farmers and delivered to the Washed plant or to local collection points. At the Washed plant, the coffee is sorted to ensure that only the ripest cherries are processed. The picking agent monitors the quality of the cherry prior to processing.
Natural coffees, such as this one, are first soaked in water to remove any underweight or damaged beans, as well as any residue. After cleaning, the cherry is transported directly to raised beds, where it is spread out in a single layer for drying. The cherry is raked regularly and visually sorted by hand to remove any damaged cherry that may have passed the initial sorting.
After a few days, Washed station personnel will increase the thickness of the coating to slow drying and stabilize moisture. Total drying time can take up to three weeks on cloudy days, or two weeks if the weather is sunny.
The Guji region receives abundant rainfall and is characterized by steep mountainous terrain: perfect conditions for the large Variety of coffee grown.
