The Ijen farm, located in Bondowoso, Indonesia, is managed by Pak Andi, who has been growing coffee since his childhood. Originally, the region was dominated by Robusta crops, but starting in 2000, Pak Andi began to specialise in Arabica. Today, the farm produces varieties such as Komasti, Andungsari, Bourbon, Kartika and Abisinia, using organic fertilisers and shade trees for more sustainable cultivation. Harvesting takes place between April and September, with careful harvesting of red cherries and no use of pesticides.
The processing of the coffee follows strict quality controls. After harvesting, the cherries are washed, pulped and fermented for 24 hours before being washed again to remove the mucilage. They are then dried for 10 to 12 days until they reach the ideal humidity. Finally, the beans are threshed, sorted and packed for shipment. Before export, they undergo quality control at the Belift dry mill in Surabaya, where they are sorted by machines to ensure their good condition and flavour profile.
