This coffee comes from the El Guayaquil farm located in the Chirinos district of Cajamarca. The farm is managed by Sarmiento Cleyder and Marina Racho who have been working in coffee for more than 20 years. During the harvest season they have the help of 6 more employees. The farm has 3 hectares of crops that are grown under the shade of timber trees and fertilized using island guano and compost. Once harvested, the coffee is left to rest for 16 hours before being sun dried. The drying process last about a month.
