Presbítero Herrera Torres grew up among coffee plantations in northern Peru, where he learned the trade from his father at a very young age. Today he runs the San Antonio farm, a family property that has been passed down from generation to generation and currently covers some 3 hectares of land dedicated to coffee cultivation.
In recent years, he has chosen to focus exclusively on the natural process. The cherries are hand-picked at optimum ripeness, washed and placed to dry slowly on raised beds, where they spend 25 to 30 days under constant supervision. This method preserves and brings out the berry’s own flavours, adding sweetness, body and depth.
Occasionally, he also experiments with pre-fermenting the cherries before drying, a practice that adds an extra layer of acidity and a fruitier profile to the final result.
