The Coffee Gardens was founded in 2017, and one of its main objectives is the ethical production of specialty coffee, offering a transparent and direct link between coffee farmers and consumers. The Coffee Gardens manages a coffee processing station and supports the local community by providing employment, promoting gender equality and training farmers to develop their skills.
Nafuna is the name of a micro-lot of coffee that comes from the harvest of the hands of 172 small producers. They themselves deliver the fruit from their plantations to The Coffee Gardens’ processing station.
This coffee was the first batch experimentally processed using the skin contact fermentation method. Skin contact is one of the types of processing of washed coffee. After harvesting and sorting, the coffee cherries are pulped and the fresh pulp is preserved. The coffee is immersed for fermentation together with the fresh pulp (skin contact) for approximately one day. In the following stages, the coffee is washed and taken to initial drying beds under shade for 2-3 days. After these days, it is spent another 10 days in a drying yard until it reaches less than 11% humidity.
