This lot is named after a Colombian alloy of gold, copper, and silver. Tumbaga symbolizes balance, much like this decaffeinated coffee. The coffee is processed using the sugarcane decaffeination method. The process involves soaking the coffee in water with an added “extractor” (ethyl acetate, which is naturally derived from sugarcane fermentation) to reduce caffeine levels. Finally, the coffee is washed multiple times to completely remove the extractor and dried to a 10-12% moisture content.
