This new chocolate bar is made with the Philippines Mana cacao, one of our favorites, and the one with the best flavour profile matching with the pistachio and strawberry.
For the pistachios we reached out to Pistacyl, a local pistachio company that source pistachios from Castilla y Leon.. This time we wanted roasted pistachios as in our test we found that when roasted, flavour increased a lot. So as we have two roaster machines and some experience, we decided to roast them ourselves!
Finally we went creative and added some interest and complexity to the bar with some dehydrate strawberry powder, it adds a really pleasant layer of acidity, making you desire more of that flavour!
For the strawberries we contacted Natursnacks, a small company from Valladolid that dehydrates all kinds of fruits. The strawberries are grown in Segovia.
