Aeropress recipe – Etiopía Biftu Gudina

In this post, you can find two different Aeropress recipes using our washed Ethiopia Biftu Gudina. This coffee is balanced with notes of blueberries, apple pie and milk chocolate.

Biftu Gudina is a cooperative of more than 150 coffee farmers located in the district of Agaro, Jimma. Thanks to good management and the collaboration with Technoserve, an organization that helps them install eco-friendly and modern washing stations, it has become a reference for specialty coffee in Ethiopia. With the means the cooperative has made available to them, producers have managed to multiply the quality of their coffees, thus increasing their income and improving their living conditions.

Recipe – Ratio 1:15
  • Dose: 16 g
  • Grind size: Fine (a bit finer than ground salt/a bit coarser than espresso size)
  • Water: 240 g – 94ºC

Recipe structure:

  • Turn around your Aeropress and preheat the chamber of it.
  • Add the coffee.
  • @00:00 add 50 g of water, and stir the coffee.
  • @00:30 add the rest of the water to 240 g (total amount).
  • @1:00 put the wet paper filter in the cover and click it in the Aeropress.
  • @1:50 reverse your Aeropress and place it on top of a mug or jug, preheated.
  • Slowly press the plunger until 2:10 minutes
  • Your coffee is ready to be served.
Recipe – Ratio 1:11*
  • Dose: 18g
  • Grind size: fine – medium (cioarser than ground salt)
  • Water: 200g – 85ºC

Recipe structure:

  • Turn around your Aeropress and preheat the chamber of it.
  • Add the coffee.
  • @00:00 add 50 g of water, and stir the coffee.
  • @00:25 add the rest of the water 200g (total amount).
  • Stir the coffee again.
  • @1:00 put the wet paper filter in the lid, and place it in the Aeropress.
  • @1:40 reverse your Aerpress and place it on top of a mug or jar, preheated.
  • Slowly press the plunger until 2:00 minutes.
  • Your coffee is ready to be served.

In the first recipe, our final cup is lighter balance cup with notes such as blueberry and milk chocolate with a smooth acidity. On the other hand, in the second recipe, our final cup is more concentrated with a round body with notes such as apple pie, milk chocolate and a brilliant balance.

*TIP: If you feel a heavy taste in your final cup, you could do a bypass (add hot water to dilute your coffee) adding around 50 or 100 g of water.
