The organic Ambalahonka cacao comes from one of the smallest plots in the lower Sambirano valley, in northwest Madagascar. The Criollo, Trinitario, and Forastero varieties, adapted to the Malagasy climate, combine to offer complex and smooth flavors, with delicate acidity and notes of raspberry, strawberry, and cashew.
The cacao grows under native trees in an agroforestry system that protects natural forests. Additionally, reforestation of degraded areas, especially on slopes, is vital to prevent floods. Employees at the MAVA farm enjoy a comprehensive benefits package, including health insurance, transportation, and a plot of land to grow staple crops for their families.
The beans are fermented for 6 days in wooden boxes and are turned to ensure even fermentation. They are then sun-dried following a pre-drying process on concrete slabs, keeping the moisture levels under control.
