Espresso recipe | Colombia Los Aguacates

In this post, we bring you a new espresso recipe to brew a delicious cup with sweet and floral flavours. Our newly washed Colombia Los Aguacates gives a well-balanced cup with pleasant acidity, sweetness and floral notes with milk chocolate, apple and floral notes.

  • Temperature: 94.5ºC
  • Time: 25-27 seconds
  • Ratio: 1:2.6

TDS: 8.09% with an extration of 20.23%

The coffee

Luis Ernesto and Cenaida Nieto have grown this lot at Los Aguacates, a small family farm located at an altitude of 1850 meters in the community of China Alta, in the state of Tolima. The farm was a gift from Ernesto’s father, who now manages it alongside his wife and their son, Jaider. At the start they decided to grow the Castillo variety, which is more resistant to diseases and changes in climate, but produces a lower cup quality. Since their goal was to produce high quality coffee, they are now transforming the farm to only grow the Caturra variety, with a sweeter and more delicate profile.
