Product, product, product. Three ingredients: Mono Variety oil, native to Arbúcies and on the verge of disappearing (Catalonia), Cacao Kamilli Cacao (Tanzania), and spring salt from Las Salinas de San Juan (Guadalajara).
Thanks to the help of Laura, from the Veraguas project, we have been able to embark on this project to recover and promote agricultural heritage.
When we tried it, we were struck by its spicy and super-intense flavor. That was exactly what we were looking for: an oil with a strong presence that wouldn't be overpowered when mixed with chocolate.

Salar d'Arbúcies is a Variety of olive tree from Arbúcies that disappeared in 1956 due to a severe frost. In 2012, some specimens were recovered and, after several studies, a mother plant with unique genetic characteristics was selected, from which new olive groves have been created.
This Variety an organic extra virgin olive oil, grown in the Montseny Biosphere Reserve. It stands out for its aromatic complexity, with predominant notes of tomato, mint, Mediterranean herbs, and tropical flavors such as mango. It is balanced on the palate, with a fresh bitterness and spiciness.
Chemically, it stands out for its high oleic acid content (77%) and polyphenols, which give it stability, high nutritional value, and resistance to oxidation. It also allows for the production of an oil with an intense green profile even from ripe olives, a characteristic that is uncommon in the Mediterranean.
