This cacao from the Dominican Republic is grown by 25 smallholder families in the province of Duarte. They are Training in organic and bird-friendly farming techniques. At El Zorzal Farm , the crops are grown over 200km of natural forest. When the cacao is harvested, it is fermented for 6 days and then dried in the sun for a week.
The final product is a cacao with a classic chocolate profile with notes of dried fruits and dried flowers such as chamomile, rose and citronella.

For the other half of this Bar we decided to use Acid Bakehouse croissants. A butter croissant with a flaky texture that combines perfectly with this classic cacao profile.

Finally we have added croissant flakes on the back to give it the prominence it deserves.
