This chocolate has a sweet and balanced flavor, with a medium-high fluidity.
The cocoa from which we make it grows along the San Juan River in the southernmost part of Nicaragua, a few kilometers from the border with Costa Rica. The area has a humid tropical climate that is perfect for cocoa. This climate combined with rigorous fermentation and drying, makes El Castillero cocoa so chocolatey and with those sweet notes.
The cocoa is produced organically, without chemical fertilizers or insecticides. The cocoa variety is Trinitario. It has a complex flavor with a chocolatey taste, honey, yellow fruit and molasses notes with floral hints of rose, followed by a pleasant licorice finish.
After hand picking and opening the pods, the beans are fermented for 6 days in wooden crates. Drying is difficult in the very humid climate so the beans first undergo a 48-hour pre-drying phase in sun tunnels. After rigorous harvesting and sieving, the beans are packed in 50 kg jute bags with polypropylene lining, then the cocoa is ready to begin its long journey.
