The salt crystals we have used come from the Salinas de San Juan in the town of Saelices, Guadalajara. This is a spring salt deposit, produced by sedimentary deposits from the sea 200 million years ago, when the sea covered half of the peninsula.
The facilities include two wells or waterwheels, water troughs, pools, canalizations, a storehouse or alfolí and a unique ellipsoidal hermitage. The whole complex was declared an Asset of Cultural Interest (BIC) in 2007.
