We believe that this recipe is perfect for this coffee. We use a wider ratio looking for a balance of flavor but where its sweetness stands out.

This recipe is perfect with milk but we must play with the volumes, we believe that in a 150ml cup it is more balanced if we divide the espresso.


Recipe based on the results with the marzocco mini line and mazzer Kony E mill.


Coffee

Mustefa Abakeno is a small farmer, his Farm is 18 ha. Due to the lack of water in the area and limited space, Mustefa ferments the coffee for a short time before taking it to the drying beds. The result is something of a honey light process. Mustefa has recently registered as an exporter to start selling its coffee directly to buyers, which it can now do thanks to regulatory changes in Ethiopia. This lot has been chosen for the Girls Gotta Run project, which sponsors scholarships for ten teenage girls in the area.

It is a coffee with a dense body and vinous acidity, where peach, plum and dark chocolate stand out.
