This decaffeinated coffee from Colombia comes from the Farm Flores Farm in Pitalito, Huila. It is a Pink Bourbon, a Variety has gained international fame over the past decade due to its genetic rarity and the flavor profiles it offers. Pink Bourbon is a natural hybrid of red and yellow Bourbon, grown at high altitudes and, in this case, under shade, which promotes slow ripening and a higher concentration of sugars. Its reputation stems from its bright acidity, intense fruity notes, and its ability to stand out in Cupping competitions and championships Cupping the world.
At Farm Flores, Johan and Diego Vergara have developed a system of controlled fermentation and thermal shocks that further enhance the aromatic complexity of Pink Bourbon. Once the coffee has stabilized, it undergoes a decaffeination process using ethyl acetate derived from sugarcane. This method, known as natural EA, uses a compound found naturally in fruits and obtained from Colombian sugarcane. During the process, the ethyl acetate selectively binds to the caffeine and removes it, without significantly altering the rest of the aromatic compounds. After being washed with mountain water and carefully dried, the result is a decaffeinated coffee that retains all the varietal character of Pink Bourbon.
The cup offers notes of raspberry, red grape, and sugarcane, with a silky body, juicy acidity, and a refreshing blackberry aftertaste. In this case, we’re not talking about a coffee that “imitates” its caffeinated counterpart, but rather a decaf that belongs to the category of competition coffees, capable of proving that decaf can reach the highest level of specialty coffee.
