From the mountains of Palestina, Huila, we present our Pink Bourbon Washed, a specialty coffee that embodies the tradition and essence of Colombian coffee. This unique lot is the result of artisanal dedication and carefully controlled processes, offering a cupping experience that reveals the purity of its genetics.
Leading this initiative is Linarco Rodríguez, a leading figure in the specialty coffee scene in Colombia, who was recognized at the 2018 and 2019 Cup of Excellence, where his coffee ranked among the top twenty in the country. His commitment to quality, sustainability, and innovation makes him a key figure in the development of this project.
The cherries are harvested by hand, selecting only the ripest ones. They are then pulped and undergo a Washed process with controlled fermentation. The drying process lasts 22 days, until the moisture content reaches between 10% and 11%. Finally, the beans are stored in the warehouse, preserving all their freshness and aromatic complexity.
The result is a Pink Bourbon Washed authentically captures the essence of the Variety. In the cup, it offers delicate notes of chamomile, juicy peach, and refreshing pineapple, accompanied by a sweet acidity and a full-bodied flavor that envelops the palate. A coffee that honors the Washed process Washed highlights the genuine character of its origin.
Every bean tells a story of sustainable, chemical-free farming, using traditional and innovative methods, supported by 117 coffee-growing families in southern Huila.
