The Bochesa Washed plant is located in the Sidama region, at an altitude of 2000 to 2100m. The plant was established in 2022 and employs six permanent workers, four seasonal workers and 220 temporary workers. Annually, it processes between 500 and 600 tons of cherry coffee from 823 farmers growing mainly varieties such as 7454, 74110, 7440 and 74112. To promote sustainability and social welfare, the plant provides coffee seedlings to the local community and offers financial support and bonuses to farmers based on coffee deliveries. The Washed coffee processing method is used to improve its flavor and consistency. Water management practices at the plant include reducing water consumption through efficient processing technologies, separating the coffee pulp from the wastewater, and treating the wastewater prior to disposal. After processing, the completely dried parchment is stored separately for about 20 days prior to evaluation and shipment.
Process:
- Washed: Clean the coffee cherries with water.
- Pulping: Separate the fruit and peel from the kernels.
- Fermentation: Remove the mucilage in water tanks at controlled temperature until fermentation is complete (12 to 16 hours).
- Second Washed: Clean the grains with more water.
- Drying: It is taken to raised beds where it is turned regularly during the day and covered with midday and night heat. Drying takes approximately 10 to 14 days.
- Storage: Completely dry parchment is packaged and stored for approximately 20 days prior to shipment and kept in separate lots until examined and evaluated.
