Oscar Ramírez, Peru
Oscar Ramírez ’s coffee comes from Huabal, in the province of Jaén (Cajamarca), a highland region in northern Peru characterized by steep slopes, humid valleys, and a strong tradition of small-scale coffee farming. This region, with elevations ranging from 1,850 to 1,950 meters above sea level, offers ideal conditions for the development of complex and sweet coffees, thanks to cool nights, consistent rainfall during the wet season, and a distinct dry season that promotes uniform drying.
This coffee has a sweet, well-balanced profile, with notes of vanilla, chocolate, and yellow fruits, accompanied by a mild, balanced acidity, a silky body, and a sweet, lingering finish. It is a harmonious, highly drinkable cup that reflects the clarity of the washed process and the potential of high-altitude varieties.
This coffee is made up of the Caturra and Catuaí varieties, grown at high altitudes that promote slow ripening and a higher concentration of sugars. It is processed using the washed method, which involves hand-picking ripe cherries, pulping, controlled fermentation, thorough washing, and drying under natural conditions until the optimal moisture level is reached, ensuring a clean and well-defined cup.
Farms in this area tend to be small—generally less than 2 hectares—and are dominated by varieties such as Caturra and Catuai, which are grown using family-run methods and careful management practices. Under these conditions, Huabal’s washed coffees stand out for their clean, balanced, and naturally sweet flavor profile.
