TASTING NOTES
Cherries, raisins, chocolate
Citrus acidity and a silky body
Rwanda, Nyamasheke
This Red Bourbon, processed naturally and grown in Rwanda, has a profile suited for filter brewing, with a clean and balanced flavor that highlights notes of ripe cherries, raisins, and chocolate, accompanied by a distinct citrus acidity, a silky body, and a clean, pleasant finish, resulting in an elegant and well-balanced cup.
The processing begins with the manual harvesting of the cherries at their peak of ripeness, followed by a rigorous sorting process prior to drying. For this natural coffee, drying takes place on raised African beds for 15 to 22 days, with precise control of sun exposure and ambient humidity, which allows for uniform dehydration and the development of complex, clean flavor profiles.
Washed 's Kirambo station, located in the Nyamasheke district on a hill sloping down toward the shores of Lake Kivu, was built in 2008 and, after a period of unstable operations, was acquired in 2017 by Rwanda Trading Company (RTC). Since the 2018 harvest, it has been operating continuously, focusing on the production of high-quality washed and natural coffees. The station primarily processes theRed Bourbon “ Variety ,” recognized for its high potential in the cup, thanks to its collaboration with small family farmers who cultivate on small-scale plots. RTC has enhanced quality through agronomic training programs, coffee tree renewal, and access to financing, promoting sustainability and consistency in production.
