Chocolate and hazelnut Spread
with cacao and Piedmont hazelnuts
In 2021, we entered this cream in the International Chocolate Awards and it was awarded a bronze medal. The main ingredients are cacao (a blend of Criollo and Trinitario) and Piedmont hazelnuts.
cacao is the least bitter of the three cacao widely grown varieties of cacao : Forastero, Trinitario, and Criollo. The beans are light in color and have very pronounced aromas of nuts, caramel, and fruit. Specifically, the ones we use to make this cream are a blend of Criollo and Trinitario that the farmers themselves call the "Pearl" of Ecuador.
On the other hand, Piedmont hazelnuts are a unique Variety in the world with a protected designation of origin. They are completely round, sweet and with a much crunchier pulp than other hazelnuts. We want their flavor to be present, that's why this cream has 42% hazelnuts, almost four times more than commercial creams.
