100% Pistachio Spread
With pistachios from Castilla y León
The pistachio tree requires great patience. From the time it is planted, it takes between seven and eight years to begin to bear the first pistachios.
Pistachios begin to grow at the end of April and are harvested at the end of October. By this time, the fruit will have outgrown the shell, which causes the shell to break and become easier to husk. At this time is when they are harvested with the help of a vibrating umbrella.
At the selection process, the pistachios arrive still inside the outer shell, which is reddish in color. They are first dried in a special horizontal dryer. Then they are carefully extracted and the best quality ones are selected.
For this cream we wanted toasted pistachios, since after several tests we found that toasting them considerably increased the intensity of their flavor. And since we have several toasters and some experience, we toasted them ourselves!
The end result is a 100% Pistachio cream with a very intense flavor and a light and easy to spread texture.
