This coffee grows in Los Naranjos, one of José Antonio Salaverria’s farms on the slopes of the Santa Ana volcano in El Salvador. Most of his plants are Bourbon Elite, and he takes great care to ensure that the cherries are picked at their exact point of ripeness. The process for this lot is washed, with the difference that the pulping process is 80% mechanical, with no water. After pulping, the beans are submerged for 10 hours in water. José Antonio has noticed that, this way, the coffee develops cleaner, more pleasant, and brighter flavors.
