Café del Valle

In the mountains of Jalapa, in eastern Guatemala, small-scale farmers grow coffee amid pine forests and a mountainous landscape teeming with biodiversity. This area, located within the New Oriente coffee region, offers particularly favorable conditions for coffee cultivation thanks to its elevation and rich soil.

Café del Valle brings together the harvests of various small-scale farmers in the region. Rather than representing a single farm, this blend seeks to express the shared character of Jalapa through coffees grown on small plots at altitudes between 1,600 and 1,700 meters, primarily using the Bourbon, Caturra, Catuaí, and Pache varieties.

The project operates in an unusual way: in Jalapa, Primavera buys the coffee cherries directly from the farmers instead of purchasing the coffee already processed as parchment. This allows for closer collaboration with the farmers, especially in areas such as cherry selection and harvesting, with the aim of improving quality at the source.

The cherries are then processed using the washed method and carefully dried. Although Café del Valle sources coffee from different producers, the lot remains traceable down to the farm level.

The result is a coffee that reflects Jalapa’s distinctive profile: sweet, balanced, and versatile, with a dense, syrupy body and deep notes of chocolate. This coffee is the product of the collective efforts of small-scale producers in a region that, although less well-known than other coffee-growing areas in Guatemala, has its own unique identity and exceptional conditions for producing high-quality coffee.
