Ambalahonka organic cacao comes from one of the smallest plots of land in the lower Sambirano valley in northwest Madagascar. Creole, trinitario and forastero varieties, adapted to the Malagasy climate, combine to offer complex and balanced flavors, with delicate acidity and notes of raspberry and cashew.
cacao grows under native trees in an agroforestry system that protects natural forests. In addition, reforestation of degraded areas, especially on slopes, is vital to prevent flooding. Farm MAVA employees enjoy a full benefits package, including health insurance, transportation and a plot of land to grow staple foods for their families.
The grains are fermented for 6 days in wooden crates and turned to ensure a homogeneous fermentation. They are then dried in the sun after pre-drying on cement slabs, keeping humidity under control.
