Cherry, jasmine, vanilla, citrus.
In northwestern Madagascar, premium cacao grows in a unique rainforest ecosystem. UCLS, founded in 2009, initiated a cacao quality program to train its member farmers in organic farming, selection of planting materials and improved post-harvest techniques for fermentation and drying. This resulted in a substantial increase in bean quality and, therefore, farmers' livelihoods have improved substantially. cacao is grown in sustainable agroforestry systems, intercropped with mangoes, bananas, coffee, vanilla, etc. Harvesting is done manually, and the beans are fermented for 4 to 5 days in wooden boxes before being dried in the sun.
