This chocolate Bar is made with one of our favorite cocoas, Philippines Mana. In our tests it is the cacao that best combines with the flavor of pistachio and strawberry.
For the pistachios we have relied on Pistacyl, a small company from Valladolid that supplies pistachios from Castilla y León. For this Bar we wanted roasted pistachios, since after several tests we found that roasting them considerably increased the intensity of their flavor. And since we have two roasters and some experience, we roasted them ourselves!
Finally we got a little creative and added a little more interest to the Bar with some dehydrated strawberries, adding a complex layer of acidity. For the strawberries, we relied on Natursnacks, a small company from Valladolid that is dedicated to dehydrate different types of fruits.
