This lot is named after a Colombian alloy of gold, copper, and silver; Tumbaga symbolizes balance, just like this decaffeinated coffee. The coffee is processed using the sugarcane decaffeination method. The process involves immersing the coffee in water to which an “extractant” (ethyl acetate, naturally obtained from the fermentation of sugarcane) is added to reduce caffeine levels. Finally, the coffee is washed several times with water until the extractant is completely removed and dried to 10–12% moisture content.
