This coffee is born in Uganda, the fruit of the work of The Coffee Gardens, a project founded in 2017 with the mission to produce exceptional specialty coffees in an ethical and transparent way, creating a direct link between producers and consumers. From the beginning, its work has been focused on improving the income of coffee farmers, generating rural employment, promoting equality, protecting the environment and training coffee farmers.
The collaboration with Falcon Coffees began in 2019. It has now expanded with a new partnership alongside The Coffee Yard and Norman Mukuru, Producer with a track record marked by innovation, dedication and a deep commitment to quality.
This lot was processed by dry fermentation. After pulping the cherries, the berries remain in tanks without water for 40 hours, allowing the microorganisms to naturally break down the mucilage that coats them. They are then washed with cold spring water and carefully dried on African drying beds and sorted into 12 different stages prior to export.
