Recipe

This coffee is pure honey, it has a very juicy bright lemon acidity and a super silky body, it is without a doubt what I like the most about this coffee. In this brew we find flavors of plum, cherry, sweet flavors of panela and honey and floral aromas.

You could drink this coffee all day!

  • Dose: 12g (medium grind – 20 clicks with Comandante c40)
  • Water: 200g at 96°C

We will make high flow pours. This is the structure of the recipe.

  • Bloom 50g
  • @00:30 up to 125g
  • @01:10 up to 200g
  • @2:00 total brew time

Recipe based on results with Hario V60 Ceramic, comandante c40 grinder and 100ppm water.


The Coffee

Arley Delgado attributes his success to the support and skill of his wife, Maria. They work together in their farm Los Arboles in Alto el Chilurco, Huila. The farm sits at 1700 masl and is surrounded by lush landscapes and verdant trees. Arley and his wife selectively handpick ripe, red cherry and process it on their farm. The cherries are visually hand sorted, pulped and fermented for 24 hours. After fermentation, the beans are washed in clean water and then dried. Arley rakes parchment frequently to ensure even drying.
